This signature red showcases our best terroir in this full-bodied Bordeaux-style blend. It is complex and round, with well stuctured tannins, and has developed flavors of black cherry, cassis, vanilla and toasted oak. Just released this wine will develop and evolve in the bottle softening into a seamless wine with aging potential.
Winemaker Notes
The New World Reserve was hand-harvested and sorted then crushed to tank where it undergoes a cold maceration for 5 days. The grapes are then fermented entirely in stainless tanks with manual punch downs. After alcoholic fermentation, an extended post maceration allows for additional body and structure. Malolactic fermentation in barrel softens the wine by removing malic acid. Only free run wines are used in New World Reserve and are aged in 50% new and 50% 1 year old French oak barrels for 20 months before bottling.
